 Chicken Donburi Bowl

This dish for Clean Eating Chicken Donburi Bowl is incredible!! It's easy to make, adaptable, and may be prepared ahead of time for a quick lunch or light meal.

This is what I put in my family lunch boxes today.

It's actually what I've been packing for the last week. This recipe was recently cooked quite frequently. It's a great way to use up your leftover rice, and you can add it to any vegetable or salad you choose.

Teriyaki-inspired chicken nuggets are the secret to the delicious taste. I season the chicken breasts in a sweet and spicy sauce that's so easy to make that my mouth gets wet just by thinking about it!!

  •  Brown rice: For donburi bowls, I like to use leftover brown rice, but you can also use pasta, couscous, or quinoa.
  •  Sliced chicken breast. If you are going to prepare for a few days, prepare the chicken in larger quantities. This recipe will season 2-3 chicken breasts (enough for 4 donburi dishes), so double it if necessary. If you are a vegetarian, you can use the same sauce on the tofu.
  •  Salad: The idea here is to cut the salad ingredients into smaller pieces by shredding or chopping them. Feel free to use any veggies you have on hand to make this dish... I add frozen corn to lunchboxes to keep the Danbury cool in my school backpacks.

How to make the sauce for your chicken

In a mixing bowl, mix the following ingredients:

  • 1 tablespoon honey
  • 1 1/2 teaspoons tamari (or soy sauce or coconut acids)
  • 1/8 teaspoon cayenne pepper
  • Paprika, 1/8 teaspoon
  • 1 teaspoon grated ginger (I'm using store-bought jars of chopped ginger)
  • ½ teaspoon garlic (1 crushed clove)
  • Seasoned with salt and pepper

Prepare sweet and spicy chicken.

 Heat the skillet.

A few drops of oil (olive oil or coconut oil is my usual choice).

Fry the chicken breast pieces for 5 minutes or until fully cooked.

Add the sauce (see instructions above) to the chicken and fry for a few more minutes. The sauce will thicken and begin to caramelize, resulting in beautiful charred pieces on the chicken pieces.

Preparation is a big component of my meal planning schedule because I make a lot of lunch boxes every morning. So, if I'm making these donburi dishes, I'll cook rice the night before (typical leftovers from dinner), a batch of chicken (when I'm making dinner), and chop lettuce.
